I want to add an extra text that appears when passing over a certain field in a table.

Should work when exported to a PDF.

If the table cells are actually set up as form fields, there are controls for turning on a tool tip which would appear above the form field when being filled in. It could not be set up in InDesign, however. Refer to Help in Acrobat for that, or go to the Acrobat Forum.

If it is a simple InDesign table, there is no way to do that in a PDF file.
