How to set Default font in InDesign?

How do I set the default font in InDesign?  I see lots of outdated instructions on the Internet, but none of them work any more.  What is the current procedure?

With no text frames selected, choose your font and it will become the default in an open document. Do this with no document open to set the default for new documents.
