Mail Merge in 4 panel card - how to merge to PDF with bleed?

I've got a 4 panel DL greeting card that will be posted to 700 addresses. I've got the merge data sorted and it looks great in preview.

But I can only seem to output to a PDF with a document bleed by first merging the job and then saving the subsequent 2,800 page file to PDF where I can select options like bleed, etc.

 

I know that I could reduce the size of the PDF by using the function outlined on the help page but there doesn't seem to be a way to change the PDF settings that way, unless I'm missing something?

Merging to a PDF file

When you merge to a PDF file, all the options are the same as when you create a merged InDesign document. The resulting PDF takes advantage of PDF XObjects for the static parts of the page, resulting in a reduced-size, efficient PDF.

Thanks for replying. It took quite a bit of trial and error as my experience with mail merge has only been in MS Word, but it went well, once I figured out exactly how InDesign likes the data file to be formatted (comma delimited txt). The finished PDF was 52 mb and was 1300 pages long, which was quite a lengthy conversion process.
