Major issues with InDesign 19.2 on Macbook Sonoma 14.3.1

I am experiencing major issues on InDesign since I've installed Sonoma on my Macbook and I'm urgently looking for help.
First of all, Mission Control is heavily lagging as long as I have InDesign open and visible. If I hide the window in my dock, the lag disappear. I have the same issue with Photoshop but less intense.
Mission Control is a huge part of my workflow and it's hard for me to lose this habbit now. Especially since I shouldn't have to – there's a lot of money invested in both the hard and softwares and it worked perfectly prior to the updates.
I've seen at least two threads addressing this issue but no answers yet. I keep updating both the OS and InDesign for bug correction but the problem persists.
Can someone enlight me about it?
And second – and this is by far the worst of it – I'm facing unexpected freeze since few days and I think it's related to the most recent Sonoma update, which I did hoping for bug corrections.
I'm working on a standard format (like 1920 x 1080 px) with high resolution images: InDesign isn't capable of functionning in high performances and start freezing, leaving me with the rainbow loader. So when opening a file, I have to quickly change the performances to standard or I need to force quit and restart the software and sometimes the computer itself.
Even if I manage to change the settings, exporting or creating a package folder (which I need to so that someone else export for me) can result in a freeze.
I've worked on heavier documents in the past, like +100-pages books with a lot of high resolution images, and never had this issue – it sometimes crashed but nothing to worry about.
I'm a bit hopeless today because something that would need 30 minutes takes the whole afternoon now…
Does anyone has inputs so that I can fix this quickly?
Should I go back to previous version of both my OS and InDesign?
Are there any plans from Adobe or Apple to make things work on Intel machine?

Macbook Pro 13" 2018
2,3 GHz Intel Core i5
16 Gb of RAM
running on Sonoma 14.3.1
with InDesign 19.2
