How can I get away this thing that my pages are adding to the previous spread, instead of a new one?

If you are clicking [+] at the bottom of the Pages Pallet - then a single page is added AFTER currently active page - the one selected/highlighted on the Pages Pallet.

You likely have "Allow Selected Spread to Shuffle" unchecked in the Page palette menu.

With few exceptions, you should leave both "Shuffle" items checked. To uncheck either allows somewhat specialized rearrangement of pages and spreads, not usually needed except for things like brochure layouts.
