Why does the size in my Indesign document change to 7x10 in acrobat? I want the size to be 6.125w X 9.25h. I'm trying to publish a paperback on KDP but when I export my Indesign document into a pdf, the size changes. I am very new to this and I feel lost. Please help.

Looks correct. The document size you see in Acrobat includes the bleed you've chosen to add. Height 9.25 + 0.375 + 0.375 = 10.0. This is designed for a final print of 9.25, with bleed areas that you can see on screen.
