When I send an email with the link to an url of a Published Online document, it says "Publish Online" - can I change this? I'd like to call it the name of the Publication. Thanks.

It's your Outlook (or its corporate implementation) is messing up with the original URL for security reasons. Just open this thread in your browser and copy the link there.

You should be able to assign any URL to any text string in any enabled document—

The Happiest Place On Earth, etc.

If your client defaults to the actual page descriptor, you'll have to override it, unless it's all locked up for "security" reasons. It's not generally too hard to change the link text; security checking is looking for suspicious redirections or malware links.
