AI background and subject masks not accurate

Both mask opions are selecting odd stripes.

It maybe a GPU driver issue. Please provide a copy of your 'System Info' as it contains useful info regarding your hardware, driver versions, etc. You can obtain same from the Help > System Info menu.

I updated the GPU driver & rebooted. Still seeing the same issue.

There have been lots of reports of problems with the most recent Nvidia drivers, and Nvidia's release notes have referred to stability problems with Adobe apps. Some people have been able to avoid the problems by installing an older driver from, say, 6 months ago. Download older drivers from the Advanced Driver Search page:
