This action makes sure that newly imported images are not longer cropped. It has no effect on existing images. Those images you have to manually reset.
The two images you posted show an uncorrected image and an image with lens corrections applied. Lens corrections will cause a bit of cropping, to correct for the now curved edges. Reset to Adobe default will no longer apply lens corrections automatically, but if you enable this manually, then you will get some cropping again. It’s either one or the other, you can’t have both lens corrections and no cropping.

I think you have hit the nail on the head there. I can either have a full image with lens distortion or a cropped image with lens correction
Where the edge of the cropped image would have been significant such as the top of a church spire or similar I will just have to use the original RAW files as input to other processes and then post processing to try and make manual corrections to distortion, colour corrections etc
Incidentally I got to the bottom of why I get better recovery of edges with the Sony ARW Raw files
The Canon Powershot has a 4/3 sensor and my shooting is also 4/3 so there is no difference between the "Original" and "As Shot" in LR cropping options. My Sony has a 3/2 sensor and the photos are 4/3 so the "Original" puts back a lot of extra image at the edges
