Lightroom classic Transform Panel
Lightroom classic 17.1. When using the adjustment sliders in the Transfrom Panel, the grid lines no longer appear. Did I turn them off somehow?

For clarity, you probably mean Lightroom Classic 14.1
I have had this happen to me a few times. The problem can be solved via resetting your preferences.
