Lightroom Classic currently (14.2) uses AI to perform certain selections for local adjustments, Adaptive Profiles,
and in the Generative Remove tool.

There is currently no 'AI-Free' version. (and it greatly depends upon your definition of AI to determine how far back you have to go to find one, but I am guessing 10.4 released in August of 2021.)

Lightroom Classic does have some AI features. The one I use is that in the
masking function. It has a Sky selection, which I often use to darken skies
without affecting the rest of the photo. The AI feature allows it to
identify even pieces of sky visible between tree branches. Very useful!

It's false. If you want to buy Lightroom Classic, you have to get ALL the current set of features, every single one of them, the AI features and the non-AI features.

Is your concern that the AI features somehow store (or steal) your work for the benefit of Adobe or others? That doesn't happen either, the software doesn't do that, and it is against Adobe's policy to use your photos for Adobe's purposes.
