Need help with work flow using tethered DSLR to LRC saving and post processing

I am scanning vintage Kodachrome slides using a Nikon D-610, ES-2 scanning adapter, and 5000k backlight. 
The camera is detected by Lightroom Classic and captures the images.  I would like to capture a complete session of  images, save them to my external SSD.  I would like to then process the whole session as needed while keeping them in the same folder as the original captures.

I am missing something because as soon as I capture an image, it stores it in a default location an then if I immediately process the image, it does not replace the original image with the processed one.

Lightroom never replaces the original with the processed image. That is not how Lightroom works. Lightroom is a non-destructive editor, which means it leaves the original untouched and saves the edits as instructions in XMP format. These instructions are saved in the catalog. To apply the edits to an image, you export a new copy.
