Sometimes, I cannot access the sliders values on the right side of the window, it's hidden by the end of the window.

You've tripped over a known bug that's at least a year old:

https://feedback.photoshop.com/photoshop_family/topics/lr-local-ajustement-panels-truncated-on-the-right-side-french-version

Please add your constructive opinion to the bug report, and be sure to click Me Too and Follow in the upper-right corner. That will make it a little more likely that Adobe will prioritize a fix, and you'll be notified when the bug's status changes. (Safari users, uncheck the option Safari > Preferences > Privacy > Prevent Cross-Site Tracking or use Chrome or Firefox.)

Well, as I said above, it happens occasionally. For the moment everything's good. But I will switch to english version either way. Thank you 🙏

Are you scaling your display? As opposed to changing resolution (if windows)

Are you applying some OS font scaling?

No. I thought about that but I did never touch that setting or even window scaling. I tried to expand the window, it didn't work. And this issue does not happen all the time but I fear that it happens the day I really need the features, like for clients.
