The Metadata does not show 'Capture Time'

Which Metadata view have you selected? If you are using the "Default" Metadata view, be aware that this particular view can be customised by the user to show as many or as few metadata fields as you like. In this specific case, you can use the "Customize" button at the bottom of the panel and then select the "Capture Time" if you want to see that as well as "Capture Date".
