I cannot for the life of me figure out how to batch edit in this version of LR I am having to paste edit settings to each image individually! When I select several images it will only paste the settings on to the first image highlighted. Please tell me what I am doing wrong.

Edit your first image and copy the settings:

Edit >> Copy (Ctrl+C)

You will see a blue pop-up overlay confirming the settings have been copied.

Close the Edit panel and go to the Library grid (G)

Select the first image from your batch and shift click the last of the batch to select all.

Press Ctrl+V to copy the settings to all selected items.

Control Copy does not work, Command Copy is what did the copy and paste. Thank you for the help!

It's Cmd+C/V on Mac, Ctrl+C/V on Windows.
