How to Create Bulk Effect Similar to Illustrator's Image Trace?

Hi! Anyone have an idea of a process to perform where I could take bulk amount of photos and create an effect on them resulting in a look similar to the black and white of Illustrator's Image Trace? My computer takes a lot of time processing information. Curious if going through Lightroom or Photoshop is better. Attached is an image example.

My approach with Photoshop might be to convert to B&W and Posterize an image, and create an Action that will do this. Then use Photoshop's Image Processor to run the Action on a folder of images.
