Lightroom Detail edit panel not showing all the options

If the 3 options that you see are Sharpening, Noise Reduction and Color Noise Reduction, be aware that each of those options can be expanded/collapsed to show/hide the additional related sliders. Click on the left-facing arrowhead at the right-hand side of each option to expand the display to reveal the additional options (as shown in the post from @Rob_Cullen ), click again to collapse the display if needed.

Do you mean that some of the sliders are greyed out?

They don't become active until you apply some sharpening eith the 'Sharpening' slider.
