Question

Is there a pro-level machine on which I can process RAW data but this machine MUST NOT connect to the Internet. Transfer of data ONLY by SIM cards but not the Internet. Thx.

Lightroom works with images in a cloud so any machine you use MUST be connected to the internet. Your other options are Lightroom Classic, or Bridge with Adobe Camera Raw. However these options require your computer to access the internet occasionally to check your subscription status.
