RAW Photos in Lightroom - Resemble jpeg compressed images (color info, tone, exposure)

Hello, I'm experiencing an issue whenever I work with my camera's RAW photos - after loading them into lightroom or lightroom classic and I begin to edit even just the slightest (literally a +1 or -1 increment of say adjusing highlights) the photo instantaneously changes entirely resembling what looks like a jpeg image; fully compressed in color, boldness of saturation, exposure seems off - its not longer the neutral tone I was so used to working with in the past. I have since tried a series of different photos I know I've worked with in the past - now each also loads as described upon any slight change. I'll undo any adjustments, click on another photo and return the previous photo only to find it looks like how a RAW photo appears, and when I begin to adjust any parameter (again in the most minute increment of +1/-1) it does the same thing - additionally making my image appear blown out (overexposed) and extremely grainy/noisy. It looks as if i'm editing a compressed photot like a JPEG, rather than the RAW I imported. I need help to resolve this. Thank you!
