Text effects : Compound path or deleting background and stroke?

Hi y'all

I see a lot of interesting effects using appearance panel and I have a question :

What is the difference between asking a compound path via the pathfinder and deleting text background and stroke?

The result seems the same :

We get an object which is no longer text in the appearance panel and we can mlulti^ply backgrounds, displace and copy to get very interesting effects.

And the text is still editable, the effects follow the typed words. More intersting you can apply the style to any other text…

But again : Compound path or deleting background and stroke first?
