When previewing in Lightroom for Mac - how do I delete both the raw and the jpeg file?

Please explain in more detail what you mean. Previewing what/when? Do you mean viewing the photos after import? If you mean you have imported raw+jpg and now you want to delete them both, then you simply have to do that manually. Lightroom does not consider them as 'pairs'.
