Define Custom Shape not working

I'm attempting to turn a word typed with a font, into a custom shape. I can get the font to create a work path but once I have the path the Define Custom Shape option is greyed out. What am I missing? I've even just tried a single letter. All the points looked closed but still no option...?

Any ideas?
