Here's the important part: Photoshop is built around using icc profiles. They are always used and you need to understand what they are and what they do. Incorrect profiles result in incorrect display and handling of the file.

Well, do you actually use color management? If you don't, none of this matters and you've been working blind the whole time. That also might explain your colors all turning murky because you created color values that cannot be accommodated within the gamut of a specific profile.
