This font only has two styles. I want regular font style for this work. Is there any way to choose custom style option?

Thanks for the link. There are 356 font familes in this font. How to select a one that is used in the above tutorial.

It’s easy, you said you wanted Regular, so in the Poppins font, find Poppins Regular and click its Add Font button.

The picture below shows exactly where this is in Adobe Fonts. Because Poppins is originally a Google font, if you installed it from Google, you do the same thing at the Google fonts website.

This is not a variable font, so you don’t need to worry about variable fonts at all. Just find the Regular style of the font you want. This works the same way for any style you want of any font.

It looks like Poppins does indeed have a bunch of options

Check out the Variable fonts in Photoshop.  Type 'var' into the font field and pick an option.

Variable fonts can be controlled from the Properties panel with a near infinite choice

You asked about fonts used in Photoshop and MS Word.  Photoshop uses system fonts, and sees exactly the same fonts as your other apps.

Please tell me where I can find this box.

You have to have variables fonts installed to see/use the options often associated with variable fonts.

If the styles you want are installed, Photoshop should list them. So the next question is, if you choose the Poppins font in another application like Word, do you get more choices than just SemiBold and Bold? If you can’t find a Regular variant when using Poppins in any application, those styles might not be installed yet.
