Need to rollback Photoshop to stable version

I'm running Photoshop on a Mac Studio with the ultra M2 chip and 90 GB of Ram dedicated to Photoshop and suddenly I'm having issues with crashing! That's on top of the trouble I'm having with the screen re-drawing with random rectangular blocks of color or differing values. This happens at random moments, I haven't figured out a pattern. These screen changes furthermore rewrite the file itself and if I am not careful I can save them into my master file which would leave me totally F'ed.
I want to rollback Photoshop to something stable. This is madness. The Adobe engineers are wildly turning out patches that are not sufficently tested. This is not a good model for product development. So Photoshop community (and any Adobe engineers in earshot), what do you recommend? I haven't had much success with this forum, but it seems it's the only thing I've got.
Adobe seems to think my IT department can stand in for their tech support (which as knowledgeable as they are) they definitely cannot.
