Printing issue: All Fine Art Media Types are grayed out?

Hello all - I usually print on Canson Platine and in the past have had no issues with selecting its profile (which I installed) and matching recomended media type (semigloss). But I am now trying to print on Hahnemuhle's Bamboo and have downloaded and installed (2x) its profile in Color Synch folder and have successfully been able to select it for soft-proofing and in the PS dialog box. See attachments for rest of settings. I am using a 2021 MacBook Pro with Sequoia 15.6.
Here is the problem: the recommended Media type is Velvet Fine Art - but all the Fine Art media types are grayed out. I can't figure out why this is? I made some tests choosing the Ultra Premium Presentation Matte media type and it's ok - but I imagine I can get a better image selecting the recommended media type.
Also to note:
- I first had the paper in the auto feeder slot but switched to the rear feeder as recommended by Epson for their own Velvet Fine Art paper.
- The ink has switched out to Matte.
- I have "color management" turned off.
I have read several of the previous posts about similar issues and tried their suggestions: removing and adding the Epson 3880 printer to make sure it was most recent driver - it already was ; making sure I am not using Airprint (it doesn't even offer as an option); updating to the V26.11 version of PS (didn't want to update to v27 with AI just yet), turning everything off and back on etc. But still no luck. Anyone else having this issue of all the Fine Art media types grayed out?
