Perchè se in photoshop creo una selezione del cielo e la salvo come canale me la salva invertita ?

It's not doing that for me. Is it with every selection or just this one? Is this a new behavior?

You might need to reset preferences after backing up, or you might invert the selection with Ctrl+Shift+I (or Selection menu > Invert Selection).

Jane, it's been like this for as long as I can remember. Here, I selected the sky, went to Quick Mask mode and made a dupicate channel of that. Returning to standard mode, I save the selection from the Slect menu:
