When I edit a jpg file I want to save as the same by default but I cant find where to set that. The default is photoshop.

In the editor, use the menu Edit >> Preferences. Second section: saving files. Choose your preferences for 'on first save'. And if you overwrite your original after a wrong edit, don't complain.

(This is for Windows, it seems that Apple makes overwriting nearly impossible in recent versions?)

Also keep in mind that if you create layers in your edits, the jpg format does not support them. You need a format like psd or tiff.
