Duplicate the Background layer and shut off the visibility of this layer by clicking on its icon in the layers palette. Work on the Background copy layer
Use one of the selection tools, e.g. selection brush, lasso tool, to select the background, and hit delete on the keyboard.
Place a blank layer below the Background copy layer and fill it with the replacement background.
