Photoshop Elements 2021 Not Opening and Update Requests

Hello Gals and Guys -

I have a 2018 Mac Mini with the quad i3 and 8BG of memory running PhotoshopElements 2021.  The past few weeks I seem to be getting a lot of update requests for PSE2021, like every time I open it.  I figured out that I think it's because I'm deleting the file organizer after the update, so it tries to update the next time I attempt to open it.  Sometimes I don't want to update, but there's not option to pass on it, except force quit.  I have a PC running PSE2021 and there's a fix that gets rid of that stuff, but I haven't found one with the Mac.  Is there an option to get rid of that stuff or can I pass on the updates somehow?

Now that I've force quit it a few times, PSE2021 doesn't seem to want to open.  It just bounces in the in the dock, but never opens and I'm forced to kill it again.  Is there some way I can get it to open again?  Thanks for any help.
