using photoshop elements 2021 with iPhone iPhoto on Mac

Hi - I am very new to this and looking to build a catalog and organise all my personal photo's (approx 50k) - inc a ton from my iphone plus my wifes iphone. I am wanting to keep things simple in terms of both cataloging/organising and basic editing - so PE 21 seems like a good option. 

My question is that of importing photo's from multiple iphoto albums into PE. I know i can export from iphoto and then import into PE but I would like to do this in such a way that the photo's stay organised by month/date as they are in iphoto - rather than end up with thousands of iphoto pics in no particluar order etc. Whats the best way to move everythning into PE but keep the cataloging/organising already in iphoto's?
