Using Quick Selection Tool selects whole image

I have PSE 15 on a MacBook Pro, late 2016, with OS X 10.12.5. When I start off using the quick selection tool things go OK for awhile, but then the selection jumps to the whole image or most of the image not being restricted to the object I'm trying to isolate.. I've read about using this tool and watched videos, but somehow I don't think I know enough. It looks so simple when they do the illustrations, but it sure doesn't go easily for me. Any suggestions would be welcome. I feel this is far more complicated than presented and would like to know where I can find info when I have problems.

Set the style to Normal first. If the style is Fixed Size it will select the entire image and when set to Fixed Ratio it will only allow you to select a rectangle in the ratio you indicated.

It would help you better understand the tool.

You should work with smaller brush size to overcome the problem you are falling into:

Moreover, you can subtract from selection whenever more than required area comes into selection.
