Canon R5 CLOG3 to Ninja V recording question

Hey there, Im fairly new to the more complex side of codecs, formats and recording.

I have two R5 rigs that are set to record in CLOG3 BT709 linked to Atomos Ninja V recording monitors in ProRes HQ. Im usually using the footage from the monitors since its prores and i havent needed to use proxies in Premiere Pro w it.

My question may seem beginner, sorry. But is the monitor recorded footage still recorded in CLOG3 BT709? In premiere it doesnt look like log footage, and when I apply the LUT, it seems overdone and crispy instead of a starting point for color grading.

Any help or links to references/info on this would help greatly!
