Error messages, problems with rendering, exporting and playback. M1 Max

Hey folks, 

Having some real issues here, laggy video that happens at random and then refuses to render, keep on getting the attached error messages. I've cleared cache, updated the Mac, updated the software, had a remote session with Adobe which got me through one render and then the problem started immediately after. It won't let me change the renderer which seems to be the other step suggested online (attached).

I'm a long time Premiere Pro user and I recently upgraded to an M1 Max with 64GB so was excited to speed up my workflow but this is making it unusable. I'm a freelance video professional so if this can't be fixed I may be forced to switch software just for the sake of delivering to my clients, I've spent so much of my time googling and trying to fix this that my work is suffering.

If anyone has a silver bullet I'd be ridiculously appreciative.
