Essential Graphics missing options in Premiere Pro

Hello, so I have been trying out the new captions feature in the latest Premiere Pro update. Whenever I go to the essential graphics to change the appearance of the captions, I've noticed that several options are missing such as transparency, size, and the option to freely position the captions within the frame. I've watched other YouTube tutorials where video editors have all of those options enabled. I'm running the latest version of Premiere Pro (15.4.1) and I've tried this on both Mac and Windows and those options are still missing. I'm not sure if I'm missing a step to enable them but I would really like some help if possible. I've included a screenshot of the tutorial I was watching where they have all of the options enabled and I've included another screenshot of my workstation of the options that I'm missing.

I'll add a bit to Carlos' answer. We can see in your screenshot that you have created a 708 caption stream. This is a type of caption used for closed captions and usually to embed in the video file. If that is what you need, then be aware that some characteristics (the ones missing from your essential graphics panel) can not be used for that caption type. If that is not what you need, find the caption track header. In your timeline it will say "708." In the tutorial screenshot it says "Subtitle." Right click that track header, pick "Track Settings," and, in the dialogue that opens, change the subtitle type.
