Is there a way to change to default font to be something other than Minion Pro?

Don't think you can, but you can set your favorite fonts or make text styles.

Adobe Illustrator:

Window / Type / Character Styles and on upper right (3 bar thing) click Character Style Option then change default font and size under Basic Character Formats in the window

I just realized the font will sustain only for the document as I described above.  This is silly of Adobe.

Here is what I ended up doing - I set up the new Basic Character Format (steps listed above) and as a new document called Vertical.ai (something I typically use) and then saved in on my Desktop.......

Alt+Go (to see Library) then clicked through the following folders:

Application support

Adobe

Adobe Illustrator 28

en_US

New Document Profile

Moved the new Vertical.ai from my Desktop into the New Document Profile folder

It becomes available under Print as a menu bar choice when a new document is chosen. And once selected, now pops up as a Recent document/format. I cannot figure out how to save it under Save.  However it is a document format I use often (shrug shoulders.)

This forum is about Premiere Pro. Your workflow for Ai won't do much for Pr.
