Sounds good, you should be good to go. Give it a whirl. Most edting software takes some getting used to, find yourself a good tutorial, and even Adobe have some that you can use from inside Premiere and also via the create cloud app.

and if things choke, Premiere has a rock-solid proxy workflow.  You might need to convert the Iphone footage to a constant frame rate using something like handbrake.

https://handbrake.fr/downloads.php

Premiere has had issues with variable frame rate sources which as far as I know are what smartphones always record...  They've said they're working on it (for the last few years) but haven't seen any notification that the issue is resolved.    And h265 which the iphone records is heavily compressed and can be a difficult format to work with.  And variable frame rate sources can cause intermittent and unpredictable issues so you may be able to work with it... til you can't.

If you intend to use After Effects as well, you'll definitely benefit from having 128GB RAM.

My system from early 2017 still has a 1080 card in it, separate SSDs and it works fine on most projects, although you want to edit from local not external hard drives.

Hope this helps.
