MONO,STEREO,5.1,MUTLICHANNEL????

So i kind of understand mono and stereo. Mono being one output channel (aka waveform???) and Stereo being two (aka waveform) correct me if im wrong. I also understand that most microphones shoot stereo is it only a thing in export. Could someone please explain to me in dummy terms the diffrence between. Mono, stereo, 5.1, and mutlichannel selections in the modify audio tabs. Thank you so much!

5.1 is a home theather you need to feel it, and multichannel mainly used in broadcast and film is a way to separate channels example actor voices, so when a hollywood movie comes to my country, the spanish people just turn off english language and record  a version in another language, as easy as turning of english spoken actors and ad spanish voice over
