Seeking comprehensive info on Transcribe/captions panels.

Just curious if anyone can point me to a comprehensive resource to get the overview of working with the transcribe/captions. I have a variety of questions about working with both of them, but rather than post a billion questions on here, my hope is that with some due diligence I will only need to ask a few select questions here. thanks!
