Question

A fight sponsor ring mat logo didn't arrive in time for a boxing match. What tools or process could be used to virtually apply that branding to the moving camera footage?

Oh, that's a hard one to do. Seriously. You'd have to 'mask' ... roto really ... everything that crosses in front of it. A ton of work.

Something that would be done in AfterEffects or Fusion or some other compositing app, really.
