Any advice on creating bespoke dropdown text and number styles?

Hi, I need to create styles for the 3 different types of dropdown that I want to use in a new project.

I've tried doing it and I can't work it out, even with the Adobe help. It always seems to default to the formatting of the original standard style. I tried duplicating the original style and changing that but my new one doesn't even show up in the top left list of styles.

I also want to change how numbered lists look (font type and size) but I can't figure out how to do it without relying on inline formatting.

Is there such a thing as a good overview of how to do this stuff anywhere? I think I'm lacking the basic concepts and I need to get it sorted before I go too far with this project.

Open the Styles and Formatting Pod and select any existing style that is close to what you want or click New.

Note the filter dropdown where there are List options.
