How to get rid of blue line and name in Acrobat Pro DC

We are wanting to remove the blue line and date that automatically fills when people sign our documents. We use the Adobe Signature feature within Acrobat Pro DC. The articles I have read show how to do it in Adobe Sign. But we do not have a subscription specifically to Adobe Sign - just Acrobat Pro DC.

This does not apper to work for us. We do not have Adobe Sign. We use the signature feature within Acrobat Pro DC. I tried following the instructions listed in this previous post but they do not work because we do not have Adobe Sign.
