Premiere Pro dosen't automatically add a keyframe when i am animating something. Also the keyframes seem to overwrite eachother these two things make it impossible to keyframe as not only do i have to manually add each one but i cannot do it as they keep overwriting and nothing changes.

Keyframes won't be automatically added unless that specific parameter has animation enabled (and thus one keyframe created). Also, make sure that you have moved the playhead to where you want the animation to end before you change the parameter in question, as this is where the new auto-keyframe will go once you change a value.

If you make a keyframe on say, frame 1, and while the playhead is still on frame 1, you try to adjust a parameter value, that same frame 1 keyframe will change to the new value, replacing the old one, which may be the problem you are experiencing.
