Adobe Acrobat New Update is Useless and Terrible - How to revert to Older version???

This new Update to Adobe Acrobat Pro is absolutely horrible and not 'Simple' to use at all!

 

How can I revert back to the older version please prior to this latest August 2023 Update??!!!

            Also would like to know how to revert back. I have lots of files to work with and a major update without warning has completely broken my flow (what is the worst possible thing to happen before a deadline)
