Convert PDF to .txt on different PC's

Hello, i have the following problem:
when I save a PDF as .txt it has a different outcoming as when my colleague does it. (His has less paragraphs). What settings do we have to change, to get the same txt?

Are you both using the (exact) same application? What application, and what version number?

And are you converting the files in the same way? If so, which one?
