How do I download the reader DC without getting the touch version?

to my knowledge you only can switch off the touchscreen mode. To see how it works please have a look at

The Touch reading mode optimizes viewing and supports most common gestures. Acrobat DC and Acrobat Reader DC automatically switch to Touch mode when on a touch-enabled device. You can change the default preference setting for Touch mode.
