I want to use new Adobe Acrobat Reader DC interface, but I hope to default close this all tools pane as the picture as attached.

We acknowledge that the new Acrobat represents a notable change; however, we hope that as you get familiar with the new interface, you can be more productive and get more out of Acrobat.
We are actively working on all the currently unavailable features, such as customizing the All Tools positioning or user interface. And we will address them with the highest priority. This issue has already been raised to our engineering team and is being worked

Please refer to Reader>Menu>Documents>Check to Remember the Current State of Toolpane>OK>Close and reopen Reader again. Did it work?
Note: In Modern Viewer, enabling this preference is still under discussion. The functionality to hide the Toolpane in Reader's preferences is there. but there's likely a chance it may or may not work.
Hence, give us some time to hear back from the engineering team on this.

Hi, Akanchha,
I checked "Remember the Current State of Toolpane", but when I closed this all tools pane and then reboot Adobe Acrobat Reader, the all tools pane still displayed.
Please you add the function of hiding all tools pane.

If your critical workflows are impacted, you can switch to the old UI from the “Menu” on the top left corner of Windows and View Menu on MacOS. We will follow up with a detailed community-featured post, guiding you to familiarise yourself with the new interface and regular updates on upcoming changes.
