How to set your view to 2 page scrolling by default?

Is there a way to change a setting that no matter what your default view of a PDF will be 2-page scrolling?

Yes. Go to Edit (or the Reader menu if you're on a Mac) - Preferences - Accessibility and tick the "Always use Page Layout Style" check-box and then select "Two-Up Continuous" in the drop-down next to it.
