What are the default documents properties

When you open the document properties, what are the defaults? Is the title automatically filled? Is the initial view, Window options, Show set to File Name or Document Title?

There are no default properties. If they are not set in the PDF, they are not displayed. A few things are always displayed as they are not actually properties, such as the file name and size. The window title is taken from the document title, if it is available. The document title is NOT set from the file name; if you see this, the PDF creation software did that.

I thought that there would be some default properties. Under the Document properties, initial view, windows option, there is a drop down to show either the file name or document name. It will not be blank this drop down. What is the default drop down? Is this default going to change depending on how the pdf was created such as saved as pdf from a word, or by using the adobe add in, ?

No default properties are stored in a PDF. This particular property has an effect, so there is a default behaviour when it is not present. Once you have set it, it will always be in the PDF (you cannot go back to "unset"). This relates to support for accessibilty via PDF/UA-1, though it may have more general use.
