I have several files that have been downloading for days... I'm unable to delete them as well. Ipad has been restarted and updated software to no avail. Help!

Could you please share a screen recording of the event to better understand?
Also, please try the below steps once:
1. Go to Settings-> General-> Storage;
2. Search for Acrobat Reader-> Open it;
3. Click on Offload-> continue.
Once done, restart the device and then check if it helps.
